Clitoria ternatea, also known as the asian pigeonwings, bluebellvine, blue pea, butterfly pea is a flowering plant native to tropical Asia. It is named for its distinctive flower, which resembles the shape of the female reproductive organ. The flowers of Clitoria ternatea are usually bright blue, although white and pink varieties are also available. In addition to its ornamental value, this plant has been used for centuries in traditional medicine and cooking. It is known for its potential health benefits and is often brewed into teas or used as a natural food colouring. The flowers of the butterfly pea contain a variety of biologically active compounds, including antioxidants, flavonoids and anthocyanins.

Preparation: 1-2 tablespoons of dried flowers in a glass of boiling water. Leave covered for 15-20 minutes.
